Dessert Recipe!: Filipino Biko (Sweet Rice Cake with Caramel Topping)

I recently celebrated my 30th birthday, so my family was nice enough to throw me a party! My husband and I ordered some food for the party from a restaurant nearby, but imagine my look of disappointment when they said they couldn’t make one of my favorite desserts
Luckily, my husband loves me so much that he let me look up the recipe online while we were at the grocery store so we could get the ingredients to try to make the dessert.
The dish is called Biko, which is a Filipino sweet rice cake made with coconut milk, sugar, and a caramel coconut milk topping. Honestly, I really don’t like coconut much, but Biko is DELICIOUS! Walking through the grocery store, the only recipes I could find searching online on my phone called for squeezing the coconut milk out of 2 coconuts. Apparently my husband doesn’t love me that much
, so this is how we made it (serves 24)…
Ingredients:
- 1 (14 oz) can of coconut milk
- 4 cups of sweet rice
- 2 tbsp of butter
- 2 cups of sugar
- 2 eggs (beaten)
To make the rice cake:
- Preheat the oven at 300 degrees.
- Boil the sweet rice in the coconut milk mixed with 1 1/2 can of water in a pot on medium heat. Constantly stir the mixture to prevent the rice from burning.
- When the rice is cooked and almost dry (about 20 minutes), lower the heat and add the butter and sugar.
- Mix well and take the pot off the heat.
- Once the mixture is cool, mix in the eggs.
- Spread the mixture evenly into a well-buttered large Pyrex dish.
- Bake in the oven for 25-30 minutes.
Topping:
- 2 (14 oz) cans of condensed milk
- 1 (14 oz) can of coconut milk
- About 4 tbsp of flour for thickening
To make and add the topping:
- Combine the condensed milk and coconut milk into a saucepan on low heat.
- Stir in the flour, and continue stirring until the sauce thickens (about 20 minutes).
- Once the rice cake is finished baking, take the dish out of the oven, and increase the heat of the oven to 350 degrees.
- Pour the topping evenly over the rice cake.
- Place the dish back into the oven and bake until the topping is brown (about 30 minutes).
Get Cash Back When Shopping Online

If you do any shopping online, a great way to save some money is by shopping through cash back sites. When you go through these sites, you get a certain percentage of your purchase back in cash! They also list coupon codes for you use to save even more money on your online purchase.
My favorite sites to use are Ebates, Mr. Rebates, and Shop at Home because they are so easy to use and they have almost any online store you can think of. If you don’t already have an account with these sites, you’ll get $5 just for signing up. You’ll also get money just for referring your friends through your account. Once you’re ready to do some online shopping, all you have to do is enter the name of the store into the search box of the cash back site, and follow the links to the site of the online store you wish to shop at. After you checkout, you’ll see the money in your account of the cash back site. Each site sends the money out at different times, but once you’re eligible to receive the money in your account, they’ll send the check right to you.
I have an account with each of the 3 cash back sites, Ebates, Mr. Rebates, and Shop at Home, but to find the best deal, I search for the online store at each site, so I can shop through the one that offers the highest percentage cash back on my purchase. I will also do this when I post an online deal for you if it is available through these sites.
I typically find that Mr. Rebates and Shop at Home offer the most cash back, but Ebates does have double or triple cash back events every once in awhile. Shop at Home will also offer larger amounts in cash back at times, and they even have grocery coupons available. To get the most of your money, I recommend that you sign up for all 3 if you can.

Save Money for College Through Upromise

On the right sidebar of this page, you’ll notice a button for Upromise under “Save $ for College”. Being a graduate of Marquette University, a private college, I know all too well how expensive college can be, but I also know how important a good education is. My husband and I have made it a priority to try to make sure our daughter will have the means to go to college once that time comes, and I think Upromise is a great easy way to help.
